Chicken Marsala Over White Rice

Chicken cutlets are a very delicious and easy to make recipe. Chicken cutlets are regular sized pieces of chicken which can be made into thin slices of meat.You can make this much later.  Serve with deliciously cooked rice.

Ingredients
  • 1 cup of uncooked white rice.
  •  2 more cups of water.
  •  1 cup of all purpose flour.
  •  Salt to taste, black pepper, 1 pinch of dried oregano.
  • 1 pound skinless chicken, pounded to 1/4 inch thickness.  
  •  1 tablespoon of olive oil
  • 2 tablespoons of butter.                   
  •  Minced cloves and shallots.                             
  •  1 cup sliced ​​fresh mushrooms.                             
  • Half a cup of masala wine.                                        
  • 1/2 chicken stock.

How to make this great recipe.

Step 1

First put the rice and water in a saucepan and focus on a high heat.  Now reduce the heat to medium, cover and cook for 20-25 minutes until the rice is tender and the liquid is absorbed.  Keep the cooked rice aside.

Step 2

In a large bowl, whisk the flour with salt, black pepper, and oregano. Gently press the chicken breasts into the flour mixture to coat, and shake off the excess flour.

Step 3

Heat 1 tablespoon olive oil and butter in a large pot over high heat. Place the chicken in a skillet and cook for 5 to 8 minutes until golden brown. Remove the cooked chicken pieces and place in a separate pot.

Step 4

Melt the remaining 1 tablespoon butter in the same skillet over medium heat while scraping up any brown bits with a spoon. Stir in the garlic;  Until recovery.   Now add the mushrooms to it and cook until they are soft, stirring and releasing the liquid for about 10 minutes. Season with salt and black pepper, then stir in the marsala wine and chicken stock.

Step 5

Transfer the chicken back to the skillet. Spoon the sauce over the chicken pieces and increase the heat to medium.  Cover, reduce heat to medium, and simmer for another 5 minutes until sauce thickens.  Serve this to your loved ones with cooked rice.
