Ingredients:
For 4 pancakes
● 4 cups flour (500g), sifted
● 4 tablespoons baking powder
● 4 cups milk (960 ml), warm to the touch
● ¾ cup butter (170 g), melted
● 3 eggs yolks
● 4 eggs whites
● Maple syrup, to serve
Step 1:
In a large bowl, blend the flour and baking powder thoroughly .
Step 2:
In a separate bowl, combine the melted butter, milk, and egg yolks, stirring until well mixed.
Step 3:
In another bowl, use a hand mixer to beat the egg whites until they form soft peaks.
Step 4:
Pour the milk mixture into the flour mixture and stir with a rubber spatula until just combined.
Gently fold in the beaten egg whites until the batter is smooth and airy.
Step 5:
Heat an 8-inch (20cm) nonstick skillet over low heat, Pour 1 ½ cups of pancake batter into
the skillet, smoothing out the top. Cover the a lid and cook until the bottom is golden brown
and a toothpick inserted into the centre comes out clean, approximately 20 minutes. Transfer
the pancake to a plate and repeat the process with remaining batter to make 3 more
pancakes .
