Spinach & Artichoke Dip Soup

This velvety soup perfectly mirrors the flavors of a classic spinach-artichoke dip. A hint of
lemon juice brings a bright, refreshing zing. Enjoy it to the last drop with a slice of robust
whole-grain country bread, or add a handful of crusted pita chips for a delightful crunch. If
frozen artichoke hearts aren’t available, canned ones are a great substitute – Just rinse them
well to reduce the sodium before adding them to the soup.

Ingredients:

● 1(8 ounce ) package reduced-fat cream cheese, softened
● 1 cup whole milk
● 2 tablespoons extra-virgin olive oil
● 1 ½ cups chopped yellow onion
● 2 tablespoons minced garlic
● 1 (10 ounce) package frozen spinach, thawed and drained
● 4 cups lower-sodium vegetable broth
● 1 (12-ounce) package frozen artichoke hearts, thawed and coarsely chopped
● ¼ cup grated Parmesan cheese, plus more for serving
● 1 table tablespoon lemon juice
● ½ teaspoon salt
● ¼ teaspoon pepper

Directions:
Step 1:

In a medium bowl, beat together cream cheese and milk until the mixture is smooth and
creamy, which should take about 2 minutes.

Step 2:

In a large pot, heat oil over medium heat. Add the onion and cook, stirring frequently, until it
becomes soft and translucent, about 4 minutes. Stir in the garlic and cook until it becomes
fragrant, about 1 minute. Add the spinach and cook, stirring frequently to break up any
clumps, until the spinach is fully separated and heated through, about 3 minutes.Pour in the
broth and add the artichoke hearts, stirring to combine. Increase the heat to medium-high
and bring the mixture to a boil. Let it cook without stirring until the artichokes and spinach are
fully warmed through and the broth has slightly reduced, about 3 minutes. Remove from
heat.

Step 3:

Incorporate the reserved cream cheese mixture into the pot in 3 batches, whisking each
addition until it’s melted and smooth, about 2 minutes per batch. Stir in the Parmesan, lemon
juice, and salt, and continue stirring until the Pamesan is fully melted and the mixture is well
combined.

Step 4:

Spoon the mixture into 8 bowls. Garnish with a sprinkle of pepper and extra Parmesan
cheese, if desired, before serving.
